The definition of an easy gourmet recipe – I started serving this as an appetizer option my first year of private cheffing, and it’s a fan favorite. The key to this dish is the high quality sushi-grade ahi or yellowfin tuna. I recommend sourcing this from the farmers market if possible, your local fish monger, and sometimes Whole Foods will have a selection. Make sure to use your eyes and look for a plump, vibrant piece of fish. If the fish is brown or grayish, it’s likely not very fresh.
Another key element with this recipe is to use a small amount of truffle oil. I find many truffle items to be VERY powerful and too overpowering, but just a hint of the truffle is delightful.
Truffle Tuna Tartare with Crackers

This is a fun, tuna tartare with a hint of truffle – it’s luxurious, delicious, and fresh!
Ingredients
- 12 ounces sushi grade ahi tuna
- 1 Persian cucumber, finely diced
- 1 avocado, finely diced
- 1 teaspoon kosher salt
- Black pepper
- Juice of 1 lemon, about 2 tablespoons of juice; zest of 1/4 lemon
- 1 lemon – for garnish
- 1 tablespoon extra virgin olive oil
- 1 tablespoon truffle oil (plus more to taste – I prefer just a slight hint)
- 1/4 cup chives, finely diced
- 1 pack of panzanella crackers
Instructions
- Dice the Persian cucumber and avocado. Add this to a mixing bowl with the lemon juice and zest.
- Dice the chives and add 1/2 of this to the bowl. Reserve the other 1/2 to garnish on top
- Dice the tuna into small 1/4” pieces. Add this to the mixing bowl, along with the kosher salt, black pepper, olive oil, and truffle oil. Give this a light mix, being careful not to smash the fish. Taste, adjust seasoning as desired, and plate into a shallow bowl. Top with another drizzle of olive oil or truffle oil, and the chives.
