Once in a while, I’ll get a craving for a delicious, creamy butter chicken. This is my take on a healthier, make at home version. Made with just 9 pretty simple ingredients, this dish is a bit lighter and healthier than what you’ll find in restaurants, and takes just 30 minutes to whip together.
Pair with some rice or naan, and I promise you’ll be running back for seconds 🙂

Ingredients:
- 1.5 lbs (pounds) boneless skinless chicken thighs
- 2 teaspoons kosher salt
- 1/2 lemon, juiced
- 1 teaspoon paprika
- 2 teaspoons garam masala
- 1/4 cup plain greek yogurt
- 1 tablespoon neutral oil
- 2 tablespoons unsalted butter
- 2 cups rao’s marinara sauce
- cotija cheese – optional, for garnish
- cilantro – optional, for garnish
Directions:
- Cube the chicken into 1″ pieces.
- Add to a mixing bowl the cubed chicken, plain greek yogurt, kosher salt, paprika, garam masala, and lemon juice. Mix together and let marinate for as long as you can (5 minutes is fine, if you’re prepping more things, work on this before you begin to cook the chicken).
- In a medium sized pan, add 1 tablespoon of neutral oil on medium high heat. Add the marinated chicken and begin to brown (after 3-4 minutes). Stir the chicken around, flipping sides, then add the Rao’s marinara sauce. Cover with a lid and let cook on medium heat for another 5-10 minutes.
- To the chicken, add the 2 tablespoons of butter (you can skip this if you prefer to keep it lighter), and mix. Taste, adjust seasoning as desired, then plate and garnish with cotija cheese and cilantro.
