Thai Inspired Steamed Salmon with Broccoli

Description

Thai Steamed Salmon with Broccoli is a delicious, easy, one pot meal that pairs perfectly with rice for a weeknight dinner. Read the tips in the FAQ to make sure this recipe works well for you!


Ingredients

  • 12 ounces salmon
  • 1 teaspoon kosher salt
  • black pepper
  • 1 jalapeno, thinly sliced
  • 1 teaspoon brown sugar optional
  • 4 cloves garlic, chopped
  • 1/3 bunch cilantro, torn into thirds
  • 1/2 lb (pound) broccoli, cut or torn into pieces
  • 2 tablespoons soy sauce
  • 2 tablespoons neutral oil
  • 1/3 cup shao xing wine, white wine or water also works
  • 1 lime, optional
  • 1 shallot, sliced

Instructions

  1. Mix everything except the limes in a mixing bowl. Toss gently to coat the fish.

  2. Line a pot with 2 sheets of parchment paper. Add a layer of the greens, then spread the fish in one even layer on the greens. Top with remaining aromatics and broccoli.

  3. Pour in the wine into the parchment paper and bring the edges of the parchment paper together. Cover the pot with the lid and turn the heat on medium – medium high. Cook for 7 minutes then reduce the heat to medium and cook for another 7 minutes.

  4. Uncover, squeeze the  lime juice over the top, and serve immediately.
