With Thai inspired flavors like garlic, shallots, jalapeños, brown sugar, soy sauce, cilantro, and lime, this dish is unbelievably flavorful and so easy.
FAQ – Thai Steamed Salmon
- Do you need to add water to the pan? What steams the salmon?
- There is no need to add water to the pan. The fish steams inside the parchment paper with cooking the wine or water.
- What pan or pot should I use?
- It’s best to use a heavy bottomed pan (like a dutch oven or cast iron). This absorbs the heat and prevents the parchment paper from burning. I occasionally also use my stainless steel pan, and it also works well.
- Why is my parchment paper burning?
- If you turn the stove to medium heat when you begin cooking, you shouldn’t have any issues with the parchment burning. Every stove is different though, but this shouldn’t be an issue if you add the wine or water inside the parchment paper and heat everything gently on medium.
- If you really want to prevent burning, you can add 1/4 cup of water under the parchment paper / directly to the pan.

Ingredients
- 12 ounces salmon
- 1 teaspoon kosher salt
- black pepper
- 1 jalapeno, thinly sliced
- 1 teaspoon brown sugar optional
- 4 cloves garlic, chopped
- 1/3 bunch cilantro, torn into thirds
- 1/2 lb (pound) broccoli, cut or torn into pieces
- 2 tablespoons soy sauce
- 2 tablespoons neutral oil
- 1/3 cup shao xing wine, white wine or water also works
- 1 lime, optional
- 1 shallot, sliced
Instructions

Mix everything except the limes in a mixing bowl. Toss gently to coat the fish.

Line a pot with 2 sheets of parchment paper. Add a layer of the greens, then spread the fish in one even layer on the greens. Top with remaining aromatics and broccoli.

Pour in the wine into the parchment paper and bring the edges of the parchment paper together. Cover the pot with the lid and turn the heat on medium – medium high. Cook for 7 minutes then reduce the heat to medium and cook for another 7 minutes.

Uncover, squeeze the lime juice over the top, and serve immediately.
