Let’s get into week 5 of summer meal planning!
SUNDAY – Salmon Taco Bowls
Sunday’s are for prepping for the week and feeling good about eating well for the week. These Salmon Taco Bowls are a treat I make for my partner Shiping and I, and you can have the leftovers for dinner the next day. Since many of the ingredients are the same as the BBQ Chicken Salad Meal Prep that’s planned on Monday, feel free to do both preps on Sunday.
Monday – BBQ CHicken Salad Meal PREP
This BBQ chicken salad meal prep is inspired by the blackened chicken bowls at Sweetgreen. These bowls are delicious and make eating healthy throughout the week a breeze.
Tuesday – Mapo Tofu and Multigrain RIce
One of my favorite 20 minute meals, this is my take on a traditional Chinese dish. I eat this on a weekly basis because it hits all my home-cooked Chinese food cravings, and it’s so easy to make.
Wednesday – Summer Rolls with Shrimp and Nectarines
Summertime calls for fresh flavors and cool lunches. This summer roll is one of my favorite combinations of flavors, as the sweet nectarines make this extra refreshing.
Thursday – Easy Weeknight Turkey Meatballs with Greens and Spaghetti
5 ingredient turkey meatballs (technically 7 with salt and pepper) with greens and spaghetti is so simple yet satisfying. It’s perfect for a balanced weeknight dinner, and the meatballs are delicious as leftovers as well.
