Week 9 of our summer meal plan is here (where did the time go?!!), and let’s get into it! This week has 3 new recipes, one of which uses leftovers from the others to make a super delicious, easy salad.
Sunday – Easy Petrole Sole with SAuce Vierge
This easy petrole sole is super tender and flakey. Paired with the sungold sauce vierge and charred corn couscous, this dish the perfect balanced plate.ย Make this if you have guests coming over, or just for a nice elevated weeknight dinner – it’s so elegant!
Monday – Elevated Tuna Salad with Snap Peas, Cucumbers, and Garlic Aioli
Bringing back this crunchy, delicious tuna salad for my meal preps this week.
Tuesday – Summer Steak Bowl with Salsa Verde
Charred corn, fatty ribeye, roast potatoes, and this easy salsa verde make this summer steak bowl a WOW! This bowl is definitely a treat, and itโs truly one of my favorite ways to eat steak.
Wednesday – Thai Coconut Curry Meatballs
Bringing back these Thai coconut curry meatballs because they were one of Shiping’s favorite meals this summer!
Thursday – Kale Salad with Sauce Vierge
I used the leftovers from Sunday night’s petrole sole recipe to pull into this super tasty salad. The goat cheese and sweet tomatoes are a match made in heaven!
Friday – Leftovers
Clean up the fridge and enjoy the night off from cooking ๐
