Let’s get into meal planning this week!
SUNDAY – Peach and Goat Cheese Salmon Salad
This seasonal Peaches and Goat Cheese Salad is a Sweetgreen summer classic, and it’d be a great option for meal prep lunches or a nice dinner this week. This post shows here’s how you can make 4 servings at home for ~$20.
Monday – Summer Squash Lasagna
Summer squash lasagna with early girl tomatoes, goat cheese, and mozzarella. This recipe is easier than you think to make and so incredibly delicious, especially as we head into tomato season. If you’re just cooking for 1, this will last you the rest of the week, or you can break it up into smaller pans and freeze one for another week.
Tuesday – Leftovers!
Enjoy the leftover lasagna and enjoy the night off from cooking 🙂
Wednesday – Green Goddess Chicken Salad with Charred Potatoes and Balsamic Vinaigrette
This green goddess chicken salad uses many of the same leftover ingredients as the Peach and Goat Cheese Salad – repurpose the basil, balsamic vinaigrette, and even add some goat cheese to this if you’d like.
Thursday – Leftovers!
Clean up the fridge and enjoy the night off from cooking 🙂
Friday – Fresh Corn and Sungold Tomato Salad
Continue enjoying tomato season with this fresh corn and sungold tomato salad with an easy shallot vinaigrette. This would be a great side to eat along side the summer squash lasagna if you’re continue eating that as leftovers, or this would even be great alongside some easy grilled chicken.
