Mediterranean Spiced Tofu Skewers

Ingredients
- 2 packs (14 ounce each) of extra firm tofu, pat dry
- 2 tbsp tomato paste
- 2 tsp brown sugar
- 2 tsp dried oregano
- 1 tbsp kosher salt
- 1 tsp paprika
- 1 tsp garlic powder or granulated garlic
- 1 tsp ground cumin
- 1 tsp turmeric
- 1/2 tsp coriander
- 1/2 tsp ground cinnamon
- 1/2 tsp cayenne pepper
- 1/2 cup olive oil
- 1/4 cup lemon juice
- 1 cup of halved sun gold cherry tomatoes
- 1/4 cup of picked parsley leaves
- additional olive oil for drizzling
- Maldon salt, to sprinkle on tofu when plating
Instructions
- Remove tofu from packaging and use a kitchen towel or paper towel to remove any excess water. Then, cut the tofu into 1 in cubes.
- Skewer the tofu onto a wooden kebab stick, leaving about 1 in on the top and bottom.
- Make the marinade by combining all spices, tomato paste, lemon juice, and olive oil in a medium sized bowl. Whisk together until combined.
Lay the tofu skewers on a plate or sheet tray, then brush the marinade onto the tofu. Turn the skewers and brush again, making sure to coat all sides of the tofu with the marinade. Let sit for at least 1 hour. - Once ready to cook, heat grill or pan to medium high heat. Cook the tofu skewers for 3 minutes on each side, brushing additional marinade on the tofu as it cooks. Total cook time should be between 6-8 minutes.
- Plate the skewers on a serving platter. Top tofu with maldon salt, a drizzle of olive oil, the sungolds, and parsley leaves.
