Warmer weather is here, Memorial Day is coming up this weekend, and I’m ready to eat all the salads this week! I’ll be out traveling starting on Wednesday, but here are some recipes I’d recommend for the week:
- Monday – BBQ Salmon Salad with Cucumber Mango Salsa. This salad is so flavor-packed, refreshing, and perfect for the warmer weather. I use a homemade BBQ seasoning with just a few spices, and this bring such a unique and fun flare to the dish.
- Tuesday – Spring Dan Dan Noodles. My new latest obsession. I LOVE these noodles, and the sauce in this dish is TO DIE FOR. I use my homemade chili oil, but feel free use what you can find (I like the Momofuku brand as well!)
- Wednesday – Elevated Tuna Salad with Snap Peas, Cucumbers, and Garlic Aioli. Easy, healthy, and fresh, this tuna salad packs a punch with crunchy snap peas, creamy garlic aioli, and crisp cucumbers. Use this for a tuna melt or on top on a salad, and you have dinner in under 30 minutes.
- Thursday – Lemony Dijon Dill Pasta Salad. The perfect zing-y, fresh salad for summer!
