We’re in the peak of all the spring produce – and this week features snap peas, asparagus, and all the peak season strawberries.
I know that meal planning can be tough. Feeding yourselves as well as others can often be a chore in addition to our busy everyday lives. This meal plan not only has achievable and practical options, but it utilizes similar ingredients and helps eliminate too much excess food waste.
Here’s a plan that I followed and loved this spring season:
- Sunday – Miso Steamed Salmon with Smashed Cucumber and Tomato Salad
- Monday – Honey gochujang chicken salad with quick pickled cucumber strawberry kimchi, edamame, and sesame vinaigrette
- Tuesday – Easy Mapo Tofu with Spring Veg Stir Fry
- Wednesday – Steamed Gochujang chicken with asparagus and broccoli
- Thursday – Spring Pasta with Asparagus, Peas, Mint, and Burrata; Optional extra protein with Balsamic Chicken Meatballs
- Friday – Sheet Pan Pizza Salad with Spring Veg, Mint, and Burrata; Optional extra protein with Herby Chipotle Chicken Skewers
I’ve designed this meal plan to work best for 2 people, but some aspects can definitely be scaled. I start the week with a steamed salmon so I can utilize the fish as fresh as possible. Next, I’ll marinate 1.5 lbs chicken for BOTH the quinoa salad bowl and the steamed chicken. I love both of these recipes, and having the chicken already ready for the steamed chicken makes my busy Wednesday nights always super easy.
Regarding ingredient overlap, you’ll be utilizing 2 bunches of asparagus, 1 bunch of radish, snap peas, and fresh mint in multiple recipes. I also have broccoli, cherry tomatoes, and Persian cucumbers for the other recipes, which are also super versatile and yummy veggies to have on hand. You’ll also be sharing 1 container of burrata over 2 meals, and both of these are incredibly satisfying as vegetarian meals, I promise you won’t miss the meat. If you really want something else (maybe focused protein) with Thursday and Friday night dinners, I’ve included my herby balsamic chicken meatballs and honey Chipotle chicken skewers – these are delicious and a great addition to those meals as well.
