Description

A delicious, easy tuna salad that can be eaten as a healthy snack or quick lunch.


Ingredients

  • 2 cans Wild Planet albacore tuna
  • 4 ounces of snap peas, about 1 cup finely chopped
  • 1 scallion, sliced
  • 1 persian cucumber, diced
  • 1/3 cup garlic aioli (can also substitute mayo or whole fat greek yogurt)
  • 1 teaspoon Kosher salt
  • Freshly ground black pepper
  • 1 tablespoon fresh squeezed lemon juice
  • 1 tablespoon extra virgin olive oil
  • 1/2 teaspoon everything bagel seasoning (optional)

Instructions

  1. Prep the vegetables – thinly slice the snap peas and scallions, and dice the persian cucumber.

  2. Add the 2 cans of Wild Planet albacore tuna to a mixing bowl. Then, add the snap peas, cucumbers, scallions, kosher salt, black pepper, garlic aioli, and lemon juice. Mix well, taste for seasoning, adjust as desired, then plate. Top with a drizzle of extra virgin olive oil and pinch of everything bagel seasoning.

  3. Pair with crackers, crudite, or over crispy romaine, and enjoy!
