Charred Corn and Turkey Sesame Noodles. Also known Dan Dan Noodles, these are sweet, savory, and delicious summer version of traditional Chinese Sichuan noodles.
I use homemade chili oil, but feel free to use a chili oil or chili crunch you find at the store. Traditionally, these noodles are very spicy, but I like them a bit more mild. Feel free to top with more chili oil to your desired spiciness ๐

Ingredients
For the Bowl:
- 1/2 lb (pound) ground turkey
- kosher salt
- ground black pepper
- 1 ear fresh corn – cut from the core
- 1 Persian cucumber sliced thinly
- 6 ounces chinese dry noodles – I like the noodle house brand “Sichuan Dan Dan Style” Noodle from H Mart
- 1/2 bunch chives, thinly sliced – optional, or green onions
- 1/4 bunch cilantro, finely chopped
- 2 cloves garlic
For the Sauce:
- 3 tablespoons chili oil
- 2 tablespoons soy sauce
- 3 tablespoons tahini
- 2 teaspoons honey
- 2 tablespoons hot water
- 2 tablespoons rice vinegar
Instructions
- Bring a medium pot up to a boil. As the water is coming up to a boil, prepare the vegetables – cut the corn off the cob, mince the garlic, slice the cucumbers, and chop the chives and cilantro.
- Drop the noodles into the boiling water and cook according to package instructions. The brand of noodles I use only cook for about 3 minutes. Once cooked, strain the noodles and rinse under cold water to stop the cooking. This is important for Chinese noodles, as you want to eliminate the excess starch.
- Prep the sauce by combine all the ingredients into a medium sized bowl or mason jar and whisk until combined. Set aside.
- Heat a medium or large pan on medium high heat. Add the ground turkey and begin to break this up. Add a pinch of salt and black ground pepper, and continue to brown and mix the turkey. Cook for about 2 minutes, then add the minced garlic, corn kernels, another pinch of salt, and chopped cilantro. Cook for about 3-4 minutes on medium high heat, or until the corn and ground turkey begin the brown. Add the sauce mixture to this, then turn off the heat. Mix together and set aside.
- Assemble the bowls by placing a handful of noodles at the bottom of a bowl. Top with the sliced cucumbers, a couple big spoonfuls of the corn and pork mixture, more sauce if you’d like, and top with chopped chives or green onions.
Notes
Feel free to substitute the turkey with mushrooms or crumbled firm tofu to keep this dish vegetarian.ย
